After accidentally stumbling upon a couple of eye opening TED talks last year, I began the transition to a plant based lifestyle. "What the Health" came out shortly after and further convinced me that this was the best thing I could do for myself, for animals, and for the planet.
I was worried at first about getting enough protein. I weight lift, run, and do calisthenics regularly. Not to mention, I've gotta keep up with two active little boys. But I studied nutrition in college and knew it could be done without animal products. I've been reading so much about the benefits of living plant based, and I think I'm slowly but surely figuring out how to make it work best for myself and my family.
Join me for the ride.
Here's what I ate for breakfast this morning after a long run. This plant based oatmeal is so filling and packed with protein!
Lately, to get that extra protein in, I've been adding protein powder to my oats and chia pudding. One of my favorites is the Vega One All in One Nutritional Shake in Vanilla. Not only does it taste amazing but it's packed with fruits, vegetables, and ingredients I can actually pronounce. I highly recommend it.
Now on to this delicious and oh, so easy recipe.
Plant Powered Protein Oats
1/2 cup quick oats
1 scoop of Vega One Protein
Heat up the oats with a little water, either on the stove or in the microwave. Stir in the protein powder with just enough almond milk. Throw on your toppings, and you're set!
